Ingredients

Vermicelli 1 cup
Chopped onion 1/2 cup
Chopped tomatoes 1/2 cup
Curry leaves 6-8 pieces
Chopped bell pepper 1/4 cup
Green beans 1/4 cup
Chopped green chilies 1/4 cup
Green peas 1/4 cup
Carrots 1/4 cup
Ginger 1 teaspoon
Black mustard seeds 1 teaspoon
Lemon juice 1 teaspoon
Dry coriander powder 1/2 teaspoon
Garam masala powder 1/2 teaspoon
Cilantro leaves 1/8 cup
Vegetable oil 2 tablespoons
Long split green chilies 2 pieces

 

Preparation

Roast vermicelli for 3-4 mins in a medium hot pan just to make it very light golden brown.

Cooking
  • Step 1

Put 3 cups of water into a deep pan when it gets hot put 1 teaspoon oil and 1/2 teaspoon salt. Add roasted vermicelli into water. Let it boil for 3-4 mins in medium heat. Make sure vermicelli turns soft.

  • Step 2

Drain all water and rinse all vermicelli in cold water and keep aside.

  • Step 3

Add oil in a hot pan and wait until oil gets hot. Add mustard seeds. Once splattering of mustard seeds end, add curry leaves, chopped onion, green chilies, and ginger. Sauté all till onion turns to a light golden brown.

  • Step 4

Add turmeric powder, coriander powder, and Garam masala. Sauté for a min then add tomatoes and all other vegetables. Cover the pan for 5 min. Make sure all vegetables cook well.

  • Step 5

Add all vermicelli and salt into a mixture of step 4. Toss vermicelli so that it doesn’t stick together. Add lemon juice on top of it and mix well for 2-3 mins. Your Vermicelli Upma is ready to serve.

Serving

Garnish with green chopped cilantro and split green chilies on top of Vermicelli Upma. Sever hot tea or coffee along with Vermicelli Upma in breakfast.
