Veg Puff (veg patties) is a very famous snack all over India. There are several regional recipes for Veg Puff, here you will find the central Indian way of cooking Veg Puff, there it's also known as Baked samosa.

Ingredients

Item Quantity
Pastry Sheets 6
Boiled Potatoes 2 cup
Chopped green chilies 1 teaspoon
Red chili powder 1/2 teaspoon
Chopped cilantro 1/4 cup
Coriander powder 1 tablespoon
Fennel seeds 1 teaspoon
heeng 2 pinches
Cumin seeds 1 teaspoon
Chopped ginger 1 tablespoon
Chaat masala 1 teaspoon
Amchur powder 1/2 teaspoon
Garam Masala 1 teaspoon
Salt 1 teaspoon
Oil 3-4 tablespoons

Cooking
  • Step 1

Heat up oil in a pan and add heeng, fennel seeds. When splattering starts add ginger and green chilies.

  • Step 2

Add a pinch of turmeric powder adds then add boiled potatoes. While adding boiled potatoes you just mash a bit all those.

  • Step 3

Add coriander powder, amchur powder, chaat masala, red chili powder, and salt in a mixture of step 2. Mix everything well and fry for 5-6 minutes.

  • Step 4

Sprinkle garam masala and chopped green cilantro at the end.

  • Step 5

Again a mix everything well and now turn off the heat and let this mixture cool down.

  • Step 6

Take pastry sheets and cut them in 5 inches by 5 inches square. Fill stuffing, which you prepared at step 5, and seal puffs from all sides. Just prick all sides with a fork.

  • Step 7

Preheat an oven at 400 degrees F. Now put all Veg Puffs in the oven on a baking try for 15 mins. Make sure all Veg Puffs turn light golden brown. Turn off the oven and take all Veg Puffs out and enjoy with ketchup.

Serving

To give a twist in serving, open Veg Puffs from the middle and put ketchup and Ratlami Sev in middle, and close back. This will give another level of taste to Veg Puff.  You can serve Veg Puff with tea or coffee. Or pack to the kids lunch box.
