Sabudana khichadi is an Indian snack dish made up of soaked sabudana. It's a spicy and very light dish, you can enjoy it at any time of day. Very good for evening snacks with tea.

|Chopped Onion||1/4 Cup|
|Roasted Peanuts||1/4 Cup|
|Chopped Tomatoes||1/4 Cup|
|Chopped Green Chilies||2-3|
|Potatoes (cut into small pieces)||1/4 Cup|
|Chopped Ginger||2 Tablespoons|
|Chopped Cilantro||1/4 Cup|
|Cumin Seeds||1/2 Teaspoon|
|Turmeric Powder||a pinch|
|Vegetable oil||3 tablespoons|
Soak Sabudana in the water for at least two hours.
Shallow fry the potatoes.Cooking
- Step 1
Heat oil into a pan, when it heats add cumin seeds, let them splutter, add ginger, and green chilies, and fry them until light golden brown.
- Step 2
Add a pinch of turmeric powder, sauté a little bit, then add tomatoes. Sauté for 2 minutes. Don’t let them pulpy.
- Step 3
Add sabudana, salt, and lemon juice, mix all together and cook for 3 to 4 minutes.Serving
Garnish with cilantro and peanuts and it's ready to serve.
