Green pea soup is a delicious soup that is super easy to make. You can serve anyone especially kids, they will love it and you will be happy because this very very healthy and nutritious.
|Fresh Green peas||1 Cup|
|Chopped Onion||1/4 Cup|
|Chopped Garlic||2 Tablespoons|
|Chopped baby spinach||1/2 Cup|
|Chopped cilantro||1/4 Cup|
|Chopped Mint leaves||1 Tablespoon|
|Crushed Black pepper||1/2 Teaspoon|
|Vegetable stock||1 Cup|
|Olive oil||1 Tablespoon|
In the hot pan, put olive oil, add onions and garlic, sauté for 2-3 minutes. Make sure the onion turns soft then add green peas and sauté further for 2-3 minutes. Add 1 cup of water. Let it cook for 3-4 minutes more until peas get soft.
Once peas are totally soft, add baby spinach and turn off the heat and cover the lid. Let the whole mixture cool down.
After cooling a little bit, add the mint leaves and cilantro to the mixture and keep steering for a min. Put all mixture in a grinder and add one tablespoon of cream and grind it nicely, there shouldn't be any big grains. Strain the mixture for a smooth consistency.
Heat another pan, put butter, let it melt, and put a tablespoon of olive oil in melted butter. Pour the strained mixture on melted butter, add vegetable stock, keep steering it. Adjust the stock for desire consistency.
Add salt, black pepper, sugar and let it boil for 3-5 minutes into low to medium heat. Once boiled once, turn off the heat add cream for a smooth consistency and your Green Pea soup is ready to serve.
