Vegetable Pasta Soup is a very aromatic and healthy soup. It’s very flavorful cooked with fresh parsley and rosemary herb and many vegetables. You can enjoy it at the time of lunch or dinner.
|Onion chopped||1/2 Cup|
|Black eye beans||1/4 Cup|
|Vegetable broth||4 Cups|
|Tomato Puree||1 Tablespoon|
|Baby tomatoes||1/4 Cup|
|Olive Oil||2 Tablespoons|
|Salt||1/2 Teaspoon[as per taste]|
|Onion||1/2 cup chopped|
|Cayenne Powder||1/2 Teaspoon|
|Fresh Rosemary||1/2 Teaspoon|
|Parmesan cheese (shredded)||1/2 Teaspoon|
Heat a pan and add oil. Once the oil is hot add chopped onion, sauté for one minute then add fresh rosemary leaves, celery, and turnip. Sauté all material for another minute then add carrots. Mix well and let them cook for 2-3 minutes.
Add finely chopped garlic, sauté for 2 minutes then add tomato puree. Roast all the veggies for 1-2 minutes then add Black eye beans. Let it cook for 5-7 minutes on low heat.
Add vegetable broth and let it boil for 3-4 minutes.
Add pasta and baby tomatoes, let them cook again for 5 minutes in low to medium heat. Make sure beans and pasta cook well.
Add cayenne powder, fresh parsley, mix well. Garnish with Parmesan cheese before you serve Vegetable Pasta Soup.
Serve Vegetable Pasta Soup with hot garlic sticks or garlic bread.
