Veg Kofta Curry


Veg Kofta Curry is a very delicious medium spicy gravy-based curry. Veg Kofta is a ball made with vegetables and spices mixed together.

Bottle gourd – grated 1 cup
Gram flour (Besan) 1 cup
Onion paste 1/2 cup
Tomato puree 1 cup
Chopped cilantro 2 tablespoons
Coriander powder 1.5 teaspoons
Red chili powder 1/2 teaspoon
Turmeric powder 1/2 teaspoon
Kasoori methi powder 1 teaspoon
Bay leaves 2 pieces
Cumin seeds 1/4 teaspoon
Heeng powder 1 pinch
Garam masala powder 1/2 teaspoon
Green chilies 3 pieces
Ginger-garlic paste 1.5 teaspoons
Salt 1 teaspoon
Vegetable oil 2 cups for deep fry



Squeeze all water out from grated bottle gourd.

Mix ginger-garlic paste and green chilies and make fine paste of it.

  • Step 1

Mix grated bottle gourd, chopped onion, red chili powder, heeng, chopped cilantro leaves, turmeric powder, coriander powder, gram flour and 2 tablespoons of water.

Make a very soft dough, while making dough add 1/4 teaspoon of salt.

Make 5 – 6 round veg balls from dough. Balls should be soft but not loose.

  • Step 3

Add 2 cups oil to a deep fry pan and wait until oil gets hot, add veg balls on hot oil and fry for 3-4 mins in medium heat. Make sure all balls turn golden brown.

  • Step 4

Take all veg balls out of oil and keep all veg balls a side.

  • Step 5

Add 2 tablespoons oil to a fry pan and wait until oil gets hot, add cumin seeds and bay leaves. Let cumin seeds finish crackling, 1 teaspoon besan and paste of green chilies and ginger garlic. Sauté mixture for 2 mins.

Add onion paste to mixture of step 5 and sauté mixture till onion turn golden brown.

  • Step 7

Add all dry spices and sauté for a min. Add tomato puree and mix with other mixture.

Cook mixture for 4-5 mins and make sure oil separates out.

  • Step 8

Add boiled hot water into mixture of step 7 and let it boil for 2-3 mins.

  • Step 9

Add salt and fried veg kofta balls in mixture of step 8 and cook for another 4-5 mins.

  • Step 10

Add Kasoori methi powder and Garam masala powder and mix it well.

Make sure consistency of liquid, it shouldn’t be very thick, you can add water to make it liquidity consistent. If liquid is very dilute cook mixture for 2 mins more.

Delicious veg kofta curry is ready to serve.


Garnish veg kofta curry with green chopped cilantro on top and onion slices on side. Serve Veg kofta curry along with roti, naan, poori or rice.
