Turmeric powder | 1/4 teaspoons |
Coriander powder | 1/2 teaspoons |

Preparation
Cut the carrots into small cubes.
Make a paste of onions, garlic, ginger, green chilies, and tomatoes.

Heat the pan, add asafoetida and cumin seeds, and let them splutter. Then, pour in the paste that you made.

Let the paste cook until the oil separates from it. Keep stirring occasionally.

When the oil separates, add the turmeric powder and coriander powder, and sauté for a little while. Then, add the carrots. Add salt and mix well. Sprinkle a little bit of water and cover with a lid.

After half-cooking, add the peas and amchur powder, and mix well. Then, cover it again and let it cook until the peas are soft.

Open the lid, sprinkle lemon juice, garam masala, and chopped cilantro. Mix well and sauté for an additional few minutes; this completes the preparation of your Gajar Matar Sabzi, ready to serve.
Serving
Before serving hot Gajar Matar sabzi, sprinkle some freshly chopped cilantro. You can also put a cube of butter on top of it. Serve hot Gajar Matar sabzi along with hot roti or parathas.
