Kosambari, also known as Koshambari, is a popular salad originating from the western part of India. It’s very quick to prepare and very healthy. This salad is very refreshing and pairs well with any meal of the day.

Cucumber diced | 1/2 cup |
Raw mango diced | 1/2 cup |
Moong dal sprouts | 1/2 cup |
Carrot diced | 1/2 cup |
Onion diced | 1/2 cup |
Green chili, finely chopped | 2 pieces |
Chopped Cilantro | 1/4 cup |
Black pepper powder | 1 teaspoon |
Vegetable oil | 1 tablespoon |
Black mustered | 2 tablespoons |
Lemon juice | 2 tablespoons |
Cooking
- Step 1
Cut carrot, cucumber, raw mango, and onion into cubes of 1/2 inch.
- Step 2
Mix carrot, cucumber, mango, onion, tomato, and chopped chilies in a bowl. Sprinkle black pepper powder on top of it.

Add oil to a hot pan and wait until the oil gets hot. Add mustard seeds to hot oil, let the splattering finish, then turn the heat down to low-medium. Add the mixture from step 2 and mix well.

Add salt and sauté the mixture for 2 minutes. Turn off the heat, and your Kosambari is ready to go.
Serving
Just before serving, add the lemon juice on top of the mixture from step 4 and sprinkle the cilantro on top of the mix. Serve as a warm Koshambari alongside any meal, or enjoy it alone as well.
