Kosambari or Koshambari is a famous salad from the western part of India. It’s very quick to prepare and very healthy. This salad is very refreshing and can go with any type of meal of the day.

Ingredients

Half-cut cherry tomatoes | 1/2 cup |
Cucumber diced | 1/2 cup |
Raw mango diced | 1/2 cup |
Moong dal sprouts | 1/2 cup |
Carrot diced | 1/2 cup |
Onion diced | 1/2 cup |
Green chili finely chopped | 2 pieces |
Chopped Cilantro | 1/4 cup |
Black pepper powder | 1 teaspoon |
Vegetable oil | 1 tablespoon |
Black mustered | 2 tablespoons |
Lemon juice | 2 tablespoons |
Cooking
- Step 1
Cut carrot, cucumber, raw mango, and onion into cubes in a size of 1/2 inches.
- Step 2
Mix carrot, cucumber, mango, onion, tomato, and chopped chilies in a bowl. Sprinkle black pepper powder on top of it.
- Step 3
Add oil in a hot pan and wait until oil gets hot add mustard seeds in hot oil, let all splattering finish, turn the heat down to low-medium, and add all mixture of step 2 and mix well.

Add salt and sauté all mixture for 2 mins. Turn off the heat and your Kosambari is ready to go.
Serving
Just before serving add lemon juice on top of the mixture of step 4 and sprinkle cilantro on top of the mixture. Serve as warm Koshambari along with any meal or you can enjoy alone also.
