Ingredients

Item Quantity
Rice (boiled) 2 Cup
Lemon Juice    1 Tablespoon
Mustard seeds 1/2 Teaspoon
Turmeric Powder 1/4 Teaspoon
Chopped Green Chilies 2 Pieces
Curry Leaves 4-5 Pieces
Julienne Cut Onions 1/2 Cup
Julienne Cut Pepper 1/4 Cup
Chopped Garlic 1 Teaspoon
Roasted Peanuts 2 Tablespoons
Oil 3 Tablespoons
Salt 1/2 Teaspoon

 

Cooking
  • Step 1

Heat a deep-fry pan and add oil to it. Once the oil gets hot, add mustard seeds and curry leaves. Let mustard seeds splatter.

  • Step 2

After splattering, add onions, green chilies, bell peppers, and sauté for 2-3 minutes. Once the onions have turned translucent, add the garlic and sauté for 2-3 minutes, or until the pepper is soft.

  • Step 3

Add turmeric powder, lemon juice, rice, and salt, and mix everything nicely. Let it cool slightly and add peanuts. Your Lemon Rice is ready to serve.

Serving

Always serve Lemon Rice hot; the taste of Lemon Rice increases if it’s served with Coconut Chutney.
