Panchmel dal or Panchratna Dal is a very popular dal from the Northern part of India. This is a combination of five different types of dals that are part of Dal-Baati-Churma. The slow cooking method of this dal in the slow cooker will extract the full flavor of all dals and nutrition.

Coriander powder | 1 tablespoon |
Red chili Powder | 1.5 tablespoon |
Amchur powder | 1/2 tablespoon |
Chaat masala | 1/2 tablespoon |
Turmeric powder | 1 tablespoon |
Moti elaichi | 2 pieces |
Cloves | 4 pieces |
Salt | 1 tablespoon |
Cumin powder | 2 tablespoons |
Cinnamon stick | 2 inches |
Vegetable oil | 1 tablespoon |
Ghee | 1 tablespoon |
Preparation
Mix all 5 types of dals in a bowl. Add 2 cups of water and moti elaichi and cinnamon sticks. Soak up these all dals for 6-7 hrs.
Cooking- Step 1
Start your slow cooker in a high-temperature setting. Pour all soaked up dals and spices and water (same water in which dal soaked up for 6-8 hrs.) in the pot of slow cooker. Add cloves and add one cup of additional water.
Let it cook for 6-7 hrs., keep stirring in between, and checking the water level, in case of need, add more water. Make sure the water level is always higher than the dals level.
- Step 2
1 hr before serving, add oil and ghee in a hot pan and wait until oil and ghee mix and gets hot properly.
- Step 3
Add onion into hot oil/ghee and sauté till onion turns light pink and translucent.
- Step 4
Add tomatoes with onions and sauté till oil separates out.
- Step 5
Add turmeric powder, sliced ginger, and cilantro, 1 tablespoon salt, and sauté the whole mixture a bit more. Turn off the heat and let it cool down for 5 mins.
- Step 6
Pour all material of step 5 in a blender and add cumin powder, chaat masala, red chili powder, coriander powder, and amchur powder. Blend all material coarsely. Add 2-3 tablespoon water in case, if you need to blend nicely.
- Step 7
Take out 1/4 cup of dal from slow cooker and add in blended material and blend all material once more.
- Step 8
Turn heat to lower setting of the slow cooker and mix all material of blender in it. Let cook for 30 more mins and your Panchmel dal is ready to serve.
Serving
Serve hot Panchmel dal with red chili tadka in ghee on top of it. Sever in a bowl along with Baati, hot bajra roti, or tandoori roti.Panchmel dal goes very well with rice also.
