Matar Kachori

Matar kachori is a popular snack originating from the northern part of India, but is enjoyed throughout the country. You can enjoy Matar kachori along with evening tea or coffee.

Ingredients

Boiled Green peas 1 cup
Finely chopped green chilies 1 teaspoon
Finely chopped ginger 1 tablespoon
Heeng 1 pinch
Amchur powder 1/2 teaspoon
Roasted Jeera powder 1/4 teaspoon
Red chili powder 1/2 teaspoon
Coriander powder 1/2 teaspoon
Fennel seed powder 1/2 teaspoon
Garam Masala 1/2 teaspoon
Besan 1 teaspoon
Salt 1/2 teaspoon
Finely chopped fresh coriander 1/4 cup
Jeera 1/2 teaspoon
Oil 2 tablespoon
Wheat Flour 1/2 cup
Maida 1/2 cup
Fine Sooji 1 teaspoon
Ghee 3 tablespoons

Preparation

To prepare the dough, take a mixing bowl and add wheat flour, maida, and fine sooji. Add 1/4 teaspoon of salt and three tablespoons of ghee, and mix all these ingredients very well. Now, add just a little water at a time and start preparing the dough. Ensure that the dough is soft once it is ready. The dough shouldn't be too tight or too loose. Keep the dough aside at room temperature after covering with a light, wet cloth for 20-30 minutes.

Cooking
  • Step 1

Heat a pan and add two tablespoons of oil. Once the oil is hot, add heeng and jeera. Once splattering finishes, add the green chilies and ginger, and sauté for a bit.

  • Step 2

Add all dry spices and besan and roast for 2-3 minutes.

Now add the green peas, salt, and cover the pan with a lid. Wait for 2-3 minutes. Make sure the peas become mushy.

  • Step 4

Mash all the ingredients nicely. Now, add the green cilantro and roast the entire mixture. Roast the mixture until all the water has evaporated and the mixture becomes dry.  

  • Step 5

Once the mixture is dry, turn off the heat and let it cool.

  • Step 6

Now, take the dough and make a ball of the desired size. Make the ball flat and fill it with the mixture you cooled in step 5. Cover the mix from all sides and create a stuffed ball. Now, very gently press the stuffed ball to flatten it. Make sure no stuffing should come out, even a bit. Repeat the same steps to prepare all your kachoris.

  • Step 7

Please take a deep frying pan and add oil and heat it. Once the oil is hot, deep fry the kachori at a low-medium heat, one by one. Ensure all kachoris are golden brown, and they are now ready to be served.

Serving

Serve hot Matar Kachori along with red chutney and spicy chili pickle.
