Garam masala powder | 1/2 teaspoon |

Vegetable oil | 2 tablespoons |

Preparation
Roast vermicelli for 3-4 minutes in a medium-hot pan, just until it becomes very lightly golden brown.
Cooking- Step 1
Put 3 cups of water into a deep pan. When it gets hot, put one teaspoon of oil and 1/2 teaspoon of salt. Add roasted vermicelli to water. Let it boil for 3-4 minutes on medium heat. Make sure the vermicelli turns soft.

Drain all the water and rinse the vermicelli in cold water, then set it aside.

Add oil to a hot pan and wait until the oil gets hot. Add mustard seeds. Once the splattering of mustard seeds ends, add curry leaves, chopped onion, green chilies, and ginger. Sauté all till the onion turns a light golden brown.

Add turmeric powder, coriander powder, and Garam Masala. Sauté for a minute, then add tomatoes and all other vegetables. Cover the pan for 5 min. Make sure all vegetables cook well.

Add all the vermicelli and salt into the mixture of step 4. Toss vermicelli so that it doesn’t stick together. Add lemon juice on top of it and mix well for 2-3 minutes. Your Vermicelli Upma is ready to serve.
Serving
Garnish with chopped green cilantro and sliced green chilies on top of Vermicelli Upma. Serve hot tea or coffee along with Vermicelli Upma for breakfast.
